CPU Temp or Core Temp?

So after upgrading my motherboard, RAM and cooler to do some nice overclocking on my 1090t im confused. I have no idea what tempureture I should be looking at. Theres the core temp which is normally 10c lower or the CPU temp which is always 30c or more.

Which one is more important and what is the max CPU/Core temps I should have on the 1090T?

Also just a little off topic question. I noticed in my bios I have a feature called Spread Spectrum what is this?

AMD looks at the temp from the socket, and they say for the Phenoms the limit is 62c. Would be nice if they added embedded sensors to the cores...
 
Always wanted to know this too. So the TJMax stated by intel is the max CPU temp or the Core temp?
