On top of what's been mentioned above, when a river runs round a corner the outside edge of that corner is travelling faster (longer route) so erosion is increased, pushing that bank out even more creating an even bigger corner.
 
I have to say I wasn't taught why rivers don't flow in straight lines in pre-GCSE Geography and I doubt most people were. :p If you don't take GCSE or A-Level Geography you aren't going to get taught about it are you? :p

I learned it in GCSE physics when we were being taught about the subject of EROSION!
