Crisps

It's probably due to life span...I had a bag of crisps in barcelona which where in a see through plastic crisp bag...Still tasted fine though.

But it probably is to do with keeping them fresh for longer...As opposed to just keeping them fresh.
 
The foil is a sheet of metal (foil) which is bonded tighter (atoms sit closer together) than polymers (plastics). The plastic relies on long range bonding to form the polymer and is comparable to lots of bits of string bundled and knotted together. Whilst the foil (metal) is closely bonded through metallic bonding and thus has far fewer holes for oxygen/light to pass through.
