As long as they are not seriously overclocked you'll be fine. The top card will run hotter than the bottom card due to it not having much room to breathe. If yourt case supports a side mounted fan it will help as they are normally situated where cool air could be blown over the 2 cards but its not needed.
Yea, 5970 would be much better. Works out cheaper and will be easier to set up and probably perform a little bit better (due to drivers and such, crossfire/sli can take a while to be sorted properly)
