Cured Salmon (Pinched from Rick Stein)

I'd eat the heck out of that - it looks great!

Caraway seeds and salmon don't really appeal - I've got a few cure recipes which include them and I always avoid using them. There's a time and a place for caraway.

On the whole, do you like salmon and beetroot as two separate ingredients? Would you prefer to be able to control the amount you had of each or would you just never want to put them together?
 
Love them separately.... I think it's the sweetness of the salmon, and earthiness of the fresh beetroot together.

It's interesting, certainly not unpleasant, just a bit odd and frankly I think unnecessary.

Looking for other cure recipes if anyone has tried and tested favourites?
