I'm in the middle of sourcing parts for a new build, I have just received a Dell G2724D 1440p monitor, 165Hz refresh for my build, so 1440p gaming.

Is the 4070 super worth an extra £100 over a 7800xt? The 7800xt feels like really good bang for buck right now

Usually NVidia is the good option for high end (when money isn’t an issue and someone is happy to pay top dollar for some particular feature and some extra performance, but keep in mind that high end never offer a good performance/price ratio) and for anything below the high end, just in case some exclusive feature is relevant to you. Not your case, but no point buying a 4060 for example because of RT. I would suggest checking some reviews about the 4070 Super and specially how DLSS perform, as sooner or later it can help prolong the life of the card.
A lot of people may tell you to wait for next gen. I wouldn’t do that. When I see a 7900XTX for £779, is hard to believe anything faster than it will be cheaper. The only issue I can see is that a lot of mid/mid-high end GPUs still holding their price. Not a lot of movement there. Just find the low point of the curve and hit buy. Same thing happened with the 6800 last gen, when they dropped quite a lot in price, and suddenly increased a bit until stocks pretty much disappeared.
 
I'm a bit out of date with graphic card technology, I've been researching a fair bit the last few weeks, but I will look into DLSS and raster.

I know the super is better in most games typically, also uses less power etc, but has less memory and lower bandwidth than the 7800xt. I do like a good bang for buck purchase, goves me a warm feeling haha
