I would like to have my own custom made water cooling system. For now only CPU (13900KF), and GPU in the future (3080TI, but I will probably upgrade). My last WC was like 15 years ago (Black Ice Ext + Cascade + Eheim 1250 + 19/13mm) so I would like to check with you if the election is ok or there is something off.

Tower is the first version of the Lian Li O11 Dynamics. My idea is to install the 44mm radiator on the top and the 20mm on the bottom (I have an SPF+ PCI-e card below the graphic cars and the 30mm + 25mm for the fan doe not fit). The D5 will be installed using the horizontal front fans. Loop will be D5 -> 20mm radiator -> block -> 44mm radiator -> reservoir. Loop will be 10mm ID and 16mm OD. Fans are all Noctua: 6 NF-A 12 mm (top and bottom) and 2 NF-P12 (horizontal):

Looks like you should have enough to get you going as long as you order enough fittings!

Only one thing I can see that you haven't mentioned is something to mix your coolant concentrate with.

Depending on how quiet you're hoping to run things, a 13900k and a 3080 or even 4090 is a hell of a lot of heat to dump into 2 rads so things could potentially get a bit noisy.
