The ordinary table salt is usually extracted from areas near the sea shores of our cities and towns. Imagine how the sewage goes into the sea and goes into the salt, too.
It could be non coeliac gluten sensitivity, which doesn't show up in the standard tests. It also might be worth looking again at the foods you removed from her diet that contained gluten.
