Try some stress tests.

Prime95/Orthos for CPU/RAM etc.
Furmark for GPU

The above two will stress your PC pretty much over what anything else can, so it'll determine whether it's a game bug due to overclocking or your PC.

Some games hate overclocking.

Strange, sounds like a game problem then. Maybe check around on their official forums, other people should have the same problem if the game doesn't like overclocking.

I know some games, on some PCs do not like overclocking and will crash for no reason :(

Overclocking: Assassin's Creed can be sensitive to overclocking. If you've overclocked any components on your system and are having problems such as crashes, reboots and graphical anomalies, the first thing to do is set everything back to default speeds and try running the game. If you don't experience the same problems at default speed, or they're reduced in severity, then your overclock is the primary culprit. Either permanently reduce your overclock and/or increase cooling to regain stability. Don't assume that because other games run with stability at a particular speed that Assassin's Creed will do the same.

Have you tried reducing the overclock by small amounts? Maybe 50Mhz at a time until it stops crashing, you might be able to go to e.g. 2.9Ghz and stop the crashing, no noticeable performance should be lost by reducing 100Mhz
