Depends exactly what needs doing.
Unless there's some nasty gotchas in the requirement, I'd be disappointed if it took more than a day. I'd have the firewall / UTM appliance pre-configured for the WAN side and, ideally, the LAN side. Likewise a decent business-grade WiFI AP ready to go.
Even allowing time for racking kit (assuming there is rack), patching and ironing out snags, a day should be enough IMHO.
You guys having 100mb barers installed, did you check the cost of having 1gb barers instead?
When we had our 100mb barer installed a few years back, GB was expensive and just not worth considering.
RIght now 1gb barers cost the same as 100mb. I guess it all depends on what you think the future will bring. We really didn't think we'd ever fully utilise the 100mb connection but here we are a few months away from having 200mb with the option of taking that all the way to 1gb.
