aren't lard and beef dripping synonymous ? ... unless you are making your own, genuine, beef dripping

... vegetable oil for doughnuts though

Thanks, never realised that, personally, main use of lard is short-crust pastry .. will have to try making pastry with beef dripping now.

I recently started making home made chips again after seeing a Youtube video on how to make them like a chippy. I used beef dripping and Maris Piper potatoes and they turned out amazing. Not quite the same as a chippy, but really nice and crispy.

Soak for 30 mins in cold water to remove starch, add to salted cold water and bring to the boil and cook until softened (15 mins), allow to cool and steam dry, cook at 140c for 5 mins in beef dripping, then at 180c until crispy.

Then I read a few comments which suggested doing the final fry in small batches to keep the oil hot and then keep piling the chips into a paper lined baking tray in a low oven, to get a more authentic chippy taste.
