I have just added a 3rd drive to my raid0 array & find that when i'm deragging i get some strange results & i'm not sure what to make of it. To me it looks like the drives are still well fragmented, does anyone have a better idea if there is a problem here or not ?

When i was using 2 drives all the sqares would be blue & packed together at the top & were 'well defragged' looking.

Is there a way to defragment this properly ? - using vista x64

Have you tried an offline defrag. I don't know if Defraggler does this, but O&O Defrag does. I had this problem with 2 rows of white basically, like you say, looking as if it hasn't put all the data together. An Offline defrag sorted this for me. :)

You don't have to purchase O&O Defrag as I'm sure you get a 30 day trial.

+1 for offline defragging.

Problem is that the application can't really defragment the files that are in use.
Just unplug the network cable (or disable wireless), and start a new defrag.
Leave it running for a few hours, without doing too much on the computer.
