Have you left the fat on there? I thought you were meant to trim off the fat as it tends to 'go off' much quicker than the meat?

Fat can oxidise and taste funny after a while. Eat it quick

Got one, did the job for jerky and fruit.

As answered two posts below mine, the fat oxidises much quicker than the meat and hence 'goes off' more quickly.

not by much and youll probably of eaten it by then . we have cured and made our own meat for years

Did this last night, the beef marinated even longer from Saturday because I didn't get chance to stick it in the oven on Sunday.
