its a SERVER, the fans will overpower the noise of the disks.

Have you ever heard a recent box kicking in, the temp controlled fans sound like concord at full pelt

Yup i've never heard a HP / Compaq disk. I assume they do make noise, but compared to fans its hardly something to worry about. Not that you spend a great deal of time in the server room anyway.

besides won't the disks be 2.5" sff SAS hot plugs ? they certainly are in the DL380 G5's we are buying these days.
