I doubt you'd notice short of benchmarking. It is nice to have it directly on the board rather than sorting two cables and routing though.

My MacBook Pro seems just as quick as my sata based SSD in my desktop - no where near as big of a jump as going from HDD to M.2

Not for day to day usage but certain programs will make use of it, the Adobe suite appear to load larger raw files quicker off a m2 than a SSD.

M2 SSD seem to be ridiculously fast. I have 2 NVME drives and I can restart a PC and load back into the game I was playing in under 30 seconds. People are shocked when I say watch this I'm going to restart my pc and it's in windows again immediately. I never owned an SSD previously so cannot compare but these M2 drives are stupid fast.

Standard SSD will be nearly as fast, windows booting benefits more from improved random access of an SSD versus a hard drive. The higher transfer rates of a M2 drive wont make as much of a noticeable improvement.
