the profiles in my ubuntu install are stored in /home/.mozilla-thunderbird

Odd, mine is nothing like that.
In my home directory, I only have 2 folders: desktop and examples.

You are looking in the right place, but the folder is hidden (along with a number of other system folders and files in the same directory). In your file browsing application you will need to select an option to show hidden files.

e.g. in Konqueror I have to select: View >> Show Hidden Files

You can check by opening up a terminal and typing:

ls /home/ -al

.. should list all hidden files/folders in the home directory
