You do not HAVE to issue a receipt, but you must keep accurate records of everything your end. I would personally knock up a sign off sheet and get it signed after each job detailing the numbers and "work carried out to satisfaction" clauses.
 
Invoice is normally something that gets sent to someone to settle up - snail mail or email for example.

When they pay up you send a receipt saying they have paid.

If you are on their doorstep and they are handing you cash you can either:

1. Say thanks and give them a recipt
2. Say thanks and run away
3. Give them an invoice, they pay, you write something on the invoice saying Paid
4. Send invoice to them at a later date and send receipt after they pay
