Stretching the original remit slightly but still about gangsters you've got Infernal Affairs or the American remake The Departed. Either of which is worth a watch.

blood diamond? cant remember if hes undercover though, or it could be the departed although I don't think thats got a diamond in.

Its not Blood Diamond or The Departed

He has to learn to talk and act like the mafia types and the diamond is fake and they call it something like a "fangozee" or something!

Have a look through the films he has done on IMDB but if you're certain it isn't The Departed then I'm not sure what it is because the majority of the rest couldn't give rise to such a description.

It's 'Fugazy', which is purported to mean 'fake' in Italian. It's wrong of course. 'Finto' is Italian for fake, as relates to objects.
