Minimum 50mm for non reinforced sharp sand and cement screed and I think 30mm for fibre or chicken mesh. Screed isn't that great at anything really unless it's laid on thick.

Very well done. Looks great. Love the roof. I have a question for you. Round here, regs make us put a 150mm upstand on the leadword (2 course) Is it different where you are ? Obviously you can't do 2 course where the stone sills are but it could step up at the sides like I have had to do in the past.
Our Building inspector argues that the rain can splash up onto the brickwork and then over time that could cause water ingress and frost damage.
Keep up the great work and it will be a bit harder with the little one, congrats
