Not sure if that would be possible. The iPhone links to your gmail account so anything you do on your phone (read/delete/archive) will update on gmail as well.

Can i ask why you'd want to delete it on your phone but not from the server??
 
I believe you're current problem is that Gmail defaults to IMAP, which means your phone is connected to your mail server and thus anything you delete on your phone, deletes on the server too.

You could set your phone up as pop3

but when you set it up via pop 3 it removes it from the server when you download the message to read anyway, defeating the object. Don't think its possible i'm afriad.

because he's sharing the account with other people. He may have read it, but others may not have. If he can delete it on his phone but not from the account, then others will be free to log in and view the email that he's already read.

It should be possible.

- Setup gmail as POP3
- Tell your iPhone (when configuring the POP account) to not delete the mail from the server

This lets you download the mail locally, whilst keeping the mail on the server for others to download themselves. However, their own clients will need to be set up in the same way as yours or it's a futile exercise.
