did you want sli option with the i5 build? you only need to change the motherboard to do this.
and with AMD, sli is not an option at all, so get the best single card you can.

swap the Gainward 460 for the gigabyte 460, better cooler, saves £20 and will probably overclock further

I'm looking to spend around £700 but less if possible, yeah SLI would be an option I would consider for a small cost increase.

I will swap the GPU, really just picked the dearest one!

What advantage would I get by having the ability to run an SLI setup later on? Its just as the motherboard is an extra £60 roughly I think I could make a saving there.

when games get more advanced and the graphic card starts to struggle with all the fancy onscreen stuff, just pick up a secondhand identical card for peanuts and drop it in for more ummph.

Swap the 956 for the 955 and change the multi to get same performance and save a couple of bucks :)

Get one decent GPU and not worry about the SLI / XFire option :)
