Shadow of Mordor is the only game that uses more than 3GB VRAM and is the main reason, Nvidia was caught with their pants down with the GTX970 scandal.
None could have realised the issues with the card, if not for that game.
However, your 2 GTX780s are perfectly fine and more than adequate mate. Grab yourself a Gsync monitor and don't bother about anything else at the moment. Only when there is a single core card that can beat the 2 GTX780s by a good margin.
I would advice you to watercool them also and push them to their limits.
My biggest regret I sold the GTX780Ghz to get a 295X2 instead of buying a Gsync monitor. Not that the 295X2 was bad, on the contrary awesome card, same applies to the watercooled R9 Nano I have now, however I could have saved myself a lot of money on upgrades including Freesync monitor.
