Hi all probably a bit of a noob question but anyway:

Want to play WoW on my Mac but I don't have enough storage on my internal ssd to install and run it so I was going to buy a cheap external hard drive to run it on instead. I already read that it should be fine to run on an external HDD rather than SDD as its cheaper as long as I'm fine with longer load screens but game should run smoothly after that. So I know I should get either a usb 3.0 or 3.1 HDD for a faster experience but there is quite a lot and they vary in price quite a bit. What else should I be looking at to decide what makes 1 better than another to decide which to buy.

Thanks for the help in advance !

Have you thought about getting a cheap usb3 2.5 inch enclosure and putting the cheapest ssd you can find in it?

Other than that I'd just get any USB 3.0 external desktop drive (3.5inch) with a mains power adapter, these are faster than the portable ones. I wouldn't worry too much about the interface as the mechanical drive is going to be the bottleneck for your speeds.
