One thing to remember about renting in Canada and driving to the States is that the car's speedomoeter will be in kilometers. Not so much of a problem in Canada as everything is in metric up there, but everything is in miles down here. So hope you can do multiple conversions simultaneously on the fly.... ;)

I do a lot of driving in Ireland which has Km/h speed limits so I guess I just have to reverse the calculation. Shouldn't be too much of a problem.

One thing to point out is that if you rent the car in Toronto, you WILL NOT be able to turn the car in in Florida. Even if the company name is the same, they are different companies on either side of the border and the car CANNOT be left in the States, so you'll be doing the trip as a round trip........

Our time/destination isn't really that important. The plan is to take in lots of places on the way so if we don't make it to Florida we won't lose anything. I'll be over there for 2 weeks so a few extra days won't be a problem. We'll be returning to Toronto at least a few days before I'm due to fly back so the car will be returned there.

I've been told that the cops over there are quite strict when it comes to traffic laws, especially speed. For someone who is used to cruising along motorways at 80-85, will I get a shock when I drive over there? I'll not be in any rush, I just don't want to slip into my default driving mode and find myself getting stopped and fined for speeding. Are there any weird traffic laws I should know about?

I drove about 2500 miles over there last August. The speed limits are lower than over here, apart from the occasional 75mph limit.
We noticed that police will stop anywhere to look for speeders. We often drove and would see about 5 cars an hour but the police are still happy to sit down that road somewhere and wait for that nasty child killing speeder :D
Most people were sticking to the limits but some were speeding. We were often driving over the speed limit on the freeways, and were probably lucky we didn't come across any police when we were.

So, just be careful, the police are there and they'll wait anywhere. Just because you're driving where there isn't another town for 50+ miles doesn't mean they won't be around.

I enjoyed the driving much more than over here, hardly any cars on most the roads we used, made it so easy and with a big car like you'll be having it's so easy and you'll do the miles very easily. We had a Chrysler 300C and, it was very comfortable and loads of room.
 
The Rental place we picked up the Grand Cherokee from had a few Magnums - none of them were V8's they were all V6's, 2.7 I think?

One thing I can't remember if you folks have or not, but almost all states over here have what is called the "right turn on red" law. Which means that at an intersection, even if it is controlled by a traffic signal, if you're turning right, treat the light as if it was a stop sign. Meaning that once you come to a stop, check for traffic, you don't have to wait for the light to turn green before you can execute the turn.

Also not sure if you folks have an equivilant, but a flashing red light at an intersection means the same as a stop sign....

Might want to do a thorough review of the traffic signs over here. They are distinctly different than what you're used to. One way, Do not enter, etc... Here's a good place to start.

Canadian signage isn't much different. Just everything is in metric.

If I think of anything else, I'll post here. It's 2:30 AM right now and I just got off work, so brain is shutting down.
