Does AS5 have a shelf life?

Probably - but that shelf life depends largely on how it's been stored - cool, dry place with the cap firmly fixed (or even fridge) for best longevity.
Personally, if the gunk doesn't appear to have separated (and even then it can be re-mixed) i'll use it. I've used AS5 and other branded TIM over 5 years old and not had any problems.

Yeah I've used very old AS5 as well. Initially it might come out slightly runny, discard of that and continue - mixing if required
