Just digging this one back up as I've started installing ethernet around the house and quite like these sockets. The PCB is marked up in 568C configuration which isn't a common layout, I don't think. Does that matter? Do I just match the colours when punching down?

AFAIK TIA-568-C isn't a wiring pattern. It encompasses both T568A and T568B which are. As long as you use the same at both ends of the cable it won't matter.
Actually, with almost everything supporting Auto-MDIX, you could use different standards at each end and never actually know you've done it wrong because it'd still work.
Just checked and the spec sheet says they're labelled to T568B which is the most common option over here.

I think the main takeaway should be that there isn't a C option.
