Currently running a 5090 with the AW2725DF, which has a resolution of 1440p.

I have never gone 4K, since I value high FPS more importantly (and never had a decent enough GPU).

Is there any noticeable difference/value pushing for a 4k OLED monitor with DP2.1? I am confused with the DP change.

If you google "DP 2.1 bandwidth" you will see what the limitations are. Essentially for 4K the limit is 240Hz (without requiring video compression like Display Stream Compression).

4K is over double the pixel density compared to 1440p so noticably better.

It will make no meaningful difference at all other than perhaps some very niche use cases with multi screen setups perhaps

I went the opposite I went 1440p> 4k to 1440p. I have a lot of decent displays and I had a 4090 but sold it. Didn't like the Samsung G9 oled resolution of 5120x1440p big screen 32:9 ratio was a bit much for me. Fantastic for Windows and apps. Bought a AW3225QF 4K 240hz everything looks lovely on it and plays fine using 5070Ti or my 9070XTs but something was lacking. So I bought a MSI MPG 271QR X50 1440p and that's 500hz and it's a joy to play on. But was really wanting a new Gen 5 RGB stripe oled was waiting for the new Dell AW3426DW and considered the Asus equivalent but that cost a lot more. Ended up buying MSI MPG 341CQR and it's a fantastic display iim very pleased with it. 3440x1440p 360Hz so I recommend you that.
