Nevermind...looks like I just have to keep maximizing the 'Files' window instead of using File > Save to Remote Server.
Ideally I wanted an option in the File menu to say Save All Files to Remote Server but it doesn't look like it's possible

Erm, one of the main features of Dreamweaver, including previous versions, is to define your site.
I'm only using v6.0 and I set up my site properly using DW's wizard. Once that's done, a simple Syncronize click updates everything on your site. Everything.
So, right-click on on your site name, select Syncronize, and hit Yes to define your remote server. Job done. fini
