Easy meal to cook for Girlfriend?

Promised my lass I would make her a meal tomorrow. Got one pretty basic thing in mind but I would like some more ideas.

Let's say budget of 15 for ingredients, and no steak please.

What would you go for?

Any ideas appreciated
 
Maccaroni, boil it half way. Add in chopped toms, mushrooms, and cook for few mins then add in grated cheese and stir till its melted then onto some plates and add more cheese on top and some herbs maybe.

Jobs done. :)
 
Pro tip: I've always found that if you're trying to impress a girl then the dessert is the important thing, not the main. :o

So no point putting too much effort into your spag bol (or whatever) and then following it with a frozen cheesecake. ;)

Possibly stating the obvious here. But it's worth a mention.
 
Spag Bol is always a good and easy path to go down...

If you're feeling really lazy, you can also buy a sauce... Personally, quick and easy meal: pasta, mince, dolmios sauce, mozzarella and I think it's fresh thyme.

Personally if you're going to be watching each other eat I would avoid a messy food like spaghetti. Stuffed pasta can make a nice replacement and is very easy. Served with a tomato based sauce and some kind of herbs/salad I imagine you'd have a nice meal that requires very little effort.

The tip above about concentrating on the dessert is a good one too. Though you can get away with store-bought cheesecake if you present it nicely enough - slice on a plate, drizzle a cream/sauce around it, sprinkle bits of chocolate or icing sugar, some kind of fruit slice on the opposite side of the plate, etc.
 
Easy peasy awesome tomato and mascarpone pasta:

Buy a bottle of nice passata (£1.25)
Buy a container of marscarpone cheese (£1.50)
Buy some spaghetti (fresh or dried, whatever you find easier to cook)
Buy some mixed herbs (dried)

Put the passata into a pan (I usually use a skillet as I sometimes fry off onions before heating the passata). Add a pinch or two of mixed herbs, some salt and pepper to taste, and heat the passata up on a medium heat until it starts to bubble. Turn it down and add half the mascarpone cheese to the passata and mix in. Leave it to simmer whilst you cook the spaghetti. Once the spaghetti is ready, serve on top of the spaghetti! If you want to add some parmesan cheese to the sauce go for it, that's totally down to taste.

That's a really simple but tasty pasta meal right there, all for cheaper than you can buy the ready made pasta and sauce in the shops (well, almost, but it's so much better!)

I had a brain storm, I'm doing some chicken breasts stuffed with mozzarella and pesto, then wrapped in pancetta. Not sure if that's the way it should be but no doubt tasty!. Either a bigass mushroom full of stuff for starter. Or garlic chilli prawns.

Fingers crossed it comes up alright lol

Sounds good. i would make some kind of sauce to go with the chicken, such as a white white and roasted shallots, gin + juniper berry and cream etc. because baking chicken breasts tends to dry them out.

Serve with a saffron risotto, or put the risotto in the mushroom for the anti-pasti course.
 
Wrap it in bacon instead of pancetta for bonus man points :p

Keep an eye on the chicken breasts as they will dry out quickly. I had stuffed & wrapped chicken yesterday for dinner (albeit much less cultured - cheese in the middle, bacon round the outside!) and didn't leave it in for as long as usual, and found it was nice and juicy as a result. What are you serving with it? I do mine with roasted potatoes and carrots, but that's because my girlfriend eats something less fattening!
