System Shock 2 would get my vote.
Civilization is another shout.
Dungeon Keeper 1 / 2 as well were epic.
Age of Empires 2 while I remember.
Maybe Theme Hospital with the enhanced graphics mod.

Would be nice to know what the specs of this old PC are as well.

To mention the most obvious ones, surprised no one has yet, but there are the classic Quake 1, 2, & 3, Unreal and Unreal Tournament, Half-Life, Dooms 1, 2 and it's variants. Good ol' pre-millennium FPS. None of this ironsight and cover mechanic BS.
 
Try the old Resident Evil games, Fallout 1 & 2, Sacred, Divine Divinity, Diablo 2 & Torchlight. (last 4 are all the same genre, I'd recommened Sacred or Torchlight).
 
Mech Commander 2, W40K Final Liberation, still play now occasionally.

StarCraft
Baldur's Gate
 
You'd easily run them both, neither take anywhere near the specs of a decent 2000 PC. Do you want games from the 90's or games you can run regardless of age?
