Embarrising question for a web developer...

I feel sheepish asking this! In advance, and in my defence, I rarely set things up, so each time I do I have to re-learn. And I've certainly not needed this before... :p

How do I set up a domain so the website is controlled by one server, and email is controlled by another?

I have a site where the client needs the site on the new server, but their emails to carry on going through their old server. So what do I do? What records do I update?

Keep the MX record pointing at the old server and update the rest of the DNS to point at your new server.

Okay cool :) Got a couple of weeks yet but just thought I'd come here and check! The boss is going away for a few days so I'll be learning more about server config and setting up records soon.

So I presume MX are the mail server records, which are entirely different to the regular server records?
 
Good old Wikipedia. It's crazy that I've managed to go all this time without knowing this stuff.
