Is eSata really the full sata speed? I'm wondering if getting an eSata capable external casing is worth the extra cost over a normal usb2 connection.

Yes

Given that there is no longer a price premium on eSATA caddies there's no reason not to use it.

USB 2.0 shared speed so you get 25MB/Sec-35MB/Sec Max, probably 30MB/Sec you will see if you get lucky.

ESATA = as fast as the actual HDD can go.
