What's the correct order to wire it up? I've the following set up

Wall plate with ethernet keystone jack, ethernet cable run, wall plate with ethernet keystone jack.

I'm plugging my router/switch one end and a pc the other. Using a 1m ethernet each end to the device between plates.

Thanks

Sounds right.

Do you mean how to wire the keystone? They are normally keyed to show you what goes where. In bad practise, as long as the same colour is at the same port at either end you're good to go.

If there's an "A" and a "B" then it's B you want.

What's the difference?

The difference is the order of the cables, however it's correct practice to follow B. Which is the column on the right.

Just done the 6 connections (run of 3 cables). All working.

The cable is inside a hose pipe for 25m that's then been berried 12'' below the surface (now has 4 ton of slate, 2 paths over it) and a 5m run in the garage, and a 1m run in the house. Glad it works.

Thanks for the help. Something new I've learned
