2010 is much better in terms of disk usage, it has shunted pretty much all it's real-time I/O into memory rather than to disk. But as a results it does require a much larger memory allocation. It can chew up 16-24GB of RAM with ease.
I'd probably suggest provisioning 32GB for 1000 mailboxes on a single info store as you'll need to allow expansion room.
