I called them about an hour after I got the code from MissChief, and order was all completed around 20-30mins later (there are a fair few bits of listening to T&C et al. )....and chose a suitable install date that fits in with my routine, for just over 2 weeks time.

Pretty speedy. That said, sure MissChief also has other things to be getting on with, other than just giving out codes, so patience is your friend

So I've just been talking to a Sky Rep and apparently the prices for Movies and Sport have gone up to £36 a month now so the price is £57.50 for this deal.

But they will credit your account £27 to offset the £1.50 difference over the duration of the contract, so the first bill would be £30.50, but the bills after that would be £57.50.

Kinda sucks that a days difference means a price hike for everyone now....

That's correct. Sky Q doesn't have the different bundles/permutations of standard channels, instead offering all of them akin to the Family HD bundle. The only options are Sports and Movies which are extra.
