Fairly heavy Windows Server query

Problem.

We have a customer running Microsoft Small Business Server 2000 (SBS2000). As you will hopefully be aware this solution provides:
Windows Server 2000, Exchange Server 2000, ISA Server etc. The server also acts a domain controller and is the master domain controller effectively as it holds all the FSMO roles etc. The problem we have is that the company that currently has 50 users (SBS 2000 limit) we need to allow for a system capable of supporting 100+ users, which means that SBS 2003 is also not suitable. I wish to keep the existing Active Directory Domain intact (and not do a new clean install). The problem is SBS2000 and SBS2003 impose limitations such as:


No Trust relationships
Only one Domain
50 (75 with SBS2003) user limit.

Basically I want to remove the SBS server altogether and wish to use Windows Server 2003 and without any of the limitations imposed by SBS. The trouble is Microsoft suggest the only way to do this is to use a transition pack, which I do not want to use. I feel comfortable with transfering "Global Catalogue" and "FSMO" roles etc, and can quite happily add an additional domain controller running Windows Server 2003, but I am worried that even if I manage to demote the original SBS box that the limitations imposed by SBS will still remain in the domain despite SBS not being there anymore.
Can you shed some light into what I need to do in order to keep the same domain but be able to remove SBS and also any limitations, in order that 100+ users can happilly use the network. I realise new licenses are needed for Windows Server, Exchange and CALS etc, this isn't a problem. I'm basically creating a completely new system but wish to keep the same domain so that I don't need to remove and join my existing PCs to a new domain.

I was going to suggest using the ADMT to move users and computers from your SBS domain but ADMT needs trusts to work...

Out of interest, why do you not want to use the MS Transition Pack?

Now I think about it, I'm not 100% sure ADMT uses trusts as I've used it to move users from SBS 4.5 to SBS 2003.

Although... Microsoft recommend using the ADMT when upgrading from Win2kSBS to Win2k3SBS on a different box. (Im doing it for one of our clients in a couple of weeks. I would imagine that you could do the same but just use a new Win2k3 domain instead.
