Favourite Curry recipe

Just cooked a rogen josh and enjoyed it :)

For two people, went with;


  • 3 cloves of garlic, chopped
    One medium Onion, chopped
    1 tsp garam masala
    2 tsp paprika
    2 tbsp cumin seeds
    2 tsp chilli powder
    2 tsp coriander
    4 tbsp yoghurt
    2 tbsp single cream
    1 tbsp tomoto puree
    bit of salt/ground black pepper
    250g chopped tomato
    500g chicken

Blended the onion, garlic and spices together in a blender, cooked the chicken in a pan in a good helping of olive oil until it was browned off, added the paste and cooked for another couple of minutes. Then added the other ingredients and simmered in a pan for an hour :) Served with basmati and garlic and coriander naan. Was delish.

I can't make any sense of this.

They are over used.

They are needed in every dish.

These two statements are mutually exclusive!

I think he posts from his 'phone, he leaves posts littered with weird typos and errors all over the forums, it can be seriously hard going at times.
 
Yeah, his posts are great because of it.

I think that he was moaning because so many recipes call for so many herbs which he thinks is totally pointless. Herbs can add flavour greatly but proportions are so delicate you can easily end up having a dish dominated by one herb.

It's like the whole craze of sprinkling parsley around a dish to make it look fancy, it is commonly done but it isn't required.

:D, spot on.
Phone, iPad, pc it's all bad, slightly different errors on each. But none of its good.
Come on, i might of changed names, but my lacking of spelling and grammar is surly legendary enough.

Basically to many chefs call for herbs, herbs are great in some dishes. But they aren't needed in every dish. This is where even legendary chefs get confused IMO. They feel the need to add herbs in every signgle dish. It's not needed and some dishes I like no herbs in. Other dishes are dominated by herbs. Hope that clears it up. Basically some dishes herbs great, other dishes herbs suck. Not every dish herbs are needed.
