It has to be original BFG.
And from the more recent times most impressive was "Stake Thrower" from original Painkiller. Good realtime physics effects were unheard of back then...

Blackjack on thief 1 was pretty fun. Knocking someone out and throwing them down stairs or out a window was always good

The gun additions that were brought in to Game of the Year Edition of Unreal, which included ChaosUT, were awesome too!
