Few Questions!

Well I'm looking to get a bigger HDD and I suppose SATA is the way forward, I currently have a couple IDE drives so what I need to know is..

Can I run the one SATA drive while having the other 2 IDE drives also? will it just show as 3 physical drives? assuming I set both current HDD's as slaves?

You will need to keep your PATA drivers as they are, i.e one on master and one on slave and just add your SATA drive and it will all work fine :)
 
As fobose says leave your existing hard drives as they are, SATA doesn't have master/slave designations as IDE/PATA does because there is only one device per chain so every SATA drive is 'master' of that port.

SATA and PATA work fine together.

It will show up as 3 physical drives although you may need to go into Drive/Disk Management to see and format the drive for the first time as with any hard drive you install. :)
