Well, if you really want the i7, then you can swap out the 2500K with the 2600K in my build. But really, games will not use the extra threads, and there has been some cases where hyperthreading can reduce performance.
Also, when clocked the same, the 2500K and 2600K will give the same performance, unless the game uses more than four cores. And I don't think there are any games which uses four... most are still only using two!
EDIT: The motherboard I recommended is capable of crossfire/SLi, so no problems there.
