Try dropping the voltage down one notch at a time, run a stress test after each voltage drop, the aim is to achieve a stable overclock on the lowest voltage possible. This will help to lower temps as well.
How to overclock it properly. The Sapphire 5970 OC (the model I have in this box) is meant to be able to be overclocked even more but the Redline tool (OC tool from Sapphire) that was meant to come with it doesnt work on Windows 7 Pro 64. I've tried the normal Overdrive thing but its a little bit rubbish. I've tried to use the MSI Afterburner tool too but that wont run either.
Got the same temps on the new vcore. Gunna drop it down again and see how it goes.
