It's just the novelty of a drink that is flaming.
Inhaling gas to get you drunk is just lame anyways.
Seriously though, I'd recommend blowing them out before you neck them. A friend of mine was dunk on his birthday and did one and ended up in hospital with second degree burns. He was down for weeks just for a silly little shot.

I knew someone doing this, so we told him to leave it burning for about 30 seconds.

As far as i know it burns most of the alcohol away?
Only good way to do it is hold it in your mouth, light,then quickly swallow or just neck the shot then do gas chambers, they seemed to have an affect on me when i last did them, but then that could have just been the number of shot i was necking

We used to do flaming sambucas at one of the bars when I was at uni. I think we got a bit known for it with the bar staff. One time we walked in and sat down, and the barman brought the fire extinguisher over and sat it on our table :/
