Flashing phone with LineageOS

Guide says I also need to flash gapps, is this absolutely needed. If so do I boot into recovery, wipe partition, choose the Lineage zip from the sdcard, wait for zip to install. Then do I reboot and do the same for the gapps zip?
 
You need GApps from my experience, at the very least, you'll need the smallest one - as some [most/all] ROMs do not contain any of the Google App - i.e. the Play Store!

It would be best to follow the advice of the ROM maker - if they say load it, then do that - if you're worried about having unnecessary apps, use the Open GApps, as you can get the nano/pico one.
 
When I installed it the guide I followed specified not to reboot between installing ROM (lineage OS) and Gapps. Just install one after the other

I tried the smaller ones but they were missing a few core stuff I used (Google Now/Assistant).

Without it you won't have access to the Google Play store. You usually flash right after flashing the zip, TWRP has an option to queue zip files to flash.
 
If you don't flash gapps you won't get anything Google pretty much. Even the initial setup screens if I remember rightly.

So go to TWRP locate the linage zip then you'll have an option to add more zips, add gapps & then flash.

I assume I can do it without TWRP, just use stock recovery, think tried to install TWRP few years back on a phone and had all kinds of problems?

You can't, stock recovery will usually only allow the stock ROM for the phone. Depends on the phone but TWRP has been working fine for me since the HTC M7.

No you need TWRP. Assuming you have unlocked bootloader and fastboot and ADB installed then it's easy enough to flash.
