I put sound insulating foam tape on to of the joist and rockwool in between the joist and its worked very well

don't skimp on underlay as that's a large part of sound insulating too

Underlay is likely, although not decided upon yet, to be Axfelt Triple Layer.

What Rockwool product did you use, @eviled? Could you link me to it and that tape you used, please?

although if you have the whole floor up have you considered a continuous rubber sound deadening sheet?

they are meant to be much better

Have been recommended Rockwool RWA45 100mm - was suggested to me that the slabs are more dense than a roll and would give better sound-proofing, which seems... sensible.

What's a good price for a pack? The internet suggests that TP are pretty decent, but apparently stock is pretty rare of Rockwool at the moment. Something about the factory on a shut/slow-down?
