Florida

I went to Northwest Florida (Panama City Beach) and the area around there earlier in the summer, it definitely made a change from the usual. Absolutely gorgeous beaches, and it's a great place to hire a boat as well.
 
Why don't you at least give a park or two a chance? Universal Studios was the stand out one for me, it may surprise you.

Otherwise the keys are awesome, some lovely beaches and restaurants. The shark fishing is meant to be a great experience, we have friends who split their time between Florida and the UK just for the fishing alone.

But if you are scratching around for things to do then maybe it's worth a look at some of the others. The water parks (blizzard beach and typhoon lagoon) were also very good.
 
I can't help here, sorry. We go to Florida every couple of years but the main reason is the parks which you don't like :p. I agree with your view on the west coat though. We've done a road trip around there a couple of times now driving through places like Death Valley, Yosemite, The Grand Canyon, through Las Vegas, down into LA and stayed in a few small places like Williams and a small town in Utah and the views and landmarks are pretty amazing. We were there when the Icelandic volcano went off so we were stuck there for an extra week so we decided to drive up route 1 from LA to San Francisco and the views of the atlantic ocean are fantastic.

But yeah, Florida isn't really full of this kind of thing. Maybe check out the Alligator swamp rides or something :).
 
having had two 2 week holidays in orlando i can tell you theres loads to do for the person who doesnt like theme parks.

the things that come to mind are:

- swimming with dolphins at discovery cove. you also get to swim with a whole bunch of other stuff (in a separate pool). the best part is that its not a tourist trap. they only let in ~1000 people per day so its not stupidly busy and there arent very many queues. was the highlight of our first florida holiday. there is a bird enclosure where you can hold lots of exotic birds and feed them but we didnt have time to do that because there was a massive thunderstorm overhead

- busch gardens, specifically the behind the scenes tour. it was definitly the highlight of out second florida holiday. during the several hour tour we were able to handfeed a lot of the animals like the giraffes and come so much closer to all the animals than normal. although we were advised to back away from the hippo that was no more than two feet away from us if it turned around :p

- Kennedy space centre. as everyone else has said its was fantastic. it would have been the highlight of our holiday if the other parts werent so good

+ Cape Canaveral, the keys at sunset, Lake Okeechobee and an airboat ride through the everglades could try visitting some of the out of town Indian reservations :)

On your drive down, you should stop at St Augustine.

Its a nice little town, its not got tonnes to do but its got some real nice architecture worth seeing and theres an interesting Spanish fort. If youre passing anyway its worth a couple of hours for s stop.
 
Oh and I dont know if youre able to to or not, but if so you really should take a drive up to savannah. Its a beautiful place and well worth the trip.
 
We went pretty regularly until the little one arrived but then we love the theme parks!

Other thing I can recommend:
- Space Centre was excellent
- Swimming with wildlife... we went swimming with manatees and I thought it would be pretty rubbish (GF is really into them!) but it was actually a great day out and had a really good time...
- Everglades.. we had a great day whizzing around got to see a lot of wildlife, although the scenery is a bit same-e
- West Coast.. we spent some time driving up and down and there are some fantastic beaches and little towns..

We also one year done a few days in the Bahamas which was a nice get away if you just want to lay back and relax..
 
For me the Keys are my favourite part of Florida not good for a budget but my favourite hotel http://www.pierhouse.com/

Watersports , snorkling fishing dolphins boat trips etc

from the keys you have the Everglades and of course you do the airboats Aligators and stuff.

If your budget allows how about a 3 day cruise from Miami to the Bahamas ! ?
Believe it or not royal caribean do a fabulous 3 night mini cruise for about $300 and its absolutely worth it.
 
Cocoa beach is worth a visit if you want to relax, but then so is Clearwater. If I was driving, I would probably west coast it for a bit then head over to the keys. Spend as little time in Miami as possible. It's become a real dive.
