Ong Bak - Simply stunning fight scenes in there. Tony Jaa is a very talented martial artist. On par with Bruce Lee, Jackie Chan, Jet Lee and dare i say it, Chuck Norris!
Battle Royale - Just for the over the top carnage involved.

Nope! I've seen Norris get his little bum whooped more times than is needed, but i just wanted to look cool with the Norris crowd.

Won't go into anime or I could be here a while :)

Haven't seen it yet but thought Caché looked good too.

Ones I would highly recommend:

Caché (Hidden)
De Battre Mon Coeur S'est Arrété (The Beat That My Heart Skipped)
Cicade De Deus (City Of God)
Amélie
Das Boot
Haute Tension (Switchblade Romance)
Les Quatre Cents Coups (The 400 Blows)
A Bout De Souffle (Breathless)
Lola Rennt (Run Lola Run)

A lot of the ones I would mention have been mentioned already, but Hana-Bi and Violent Cop are two I'd definitely recommend.

In fact I'll rephrase that.

I demand that you watch them!

"Open Your Eyes" (Spanish) is one of my favourites. It was re-made as Vanilla Sky, which isn't a patch on the original. "The Eye" (Chinese) is another great film - one of the most stunning endings of all time. Just wow
