Formatting a hard drive without installing an OS?

Hi I have a copy of UBCD on a bootable cd, booted up but couldnt see the option to 'format' ? :confused:

Perhaps you can help? :)
 
Cheers guys, basically all I need to do is remove the operating system for someone as he isnt licenseed to have it, just the HDD ready to be installed with an OS.
