Found this chap in a freshwater brook.

I know the Signal crayfish is a bad immigrant, killing the natives etc. But if they are bigger, doesn't that make them better for eating?

I'm just struggling to see a disadvantage here :p I mean, if some invasive cows that were twice the size of normal cows but tasted just as good came over and started pushing out all the normal cows away, would farmers be complaining?

being bigger they probably eat bigger whatever they eat and probably have a knock on effect for other wildlife
 
This thread has made me want to apply for a license and make some traps.

Absolutely love eating Crayfish. We used to have crayfish parties in Finland in the late summer every year which basically involved eating lots of crayfish and drinking lots of beer and vodka. Wonderful combination. A plague almost totally wiped them out in the area of Finland where my family are from about 20 years ago, probably due to the introduction of the Signal Crayfish, but luckily numbers appear to be improving.
 
Wrong time of the year to eat it... Not supposed to catch it before august. Save it for few more weeks and have a Finnish crayfish party (dont worry. One will be enough as its mainly about alcohol).
Crayfish is lovely tho. One thing I miss from home...
