So I got a 3kg+ slab of pork belly. At the time, it was sealed and frozen, but my mistake was to not cut it into smaller amounts as it is just to feed 2-3 people at a time.

Aside from taking a bread knife to it and putting in the time and effort to cut it to a sizeable portion and have the remaining left frozen are there any other options?

You could also just let it defrost enough so you can cut through it, then put it back in the freezer, it'll be fine.
This is what I would do. + cook it well (measure temps as with any meat tbh) Any pork parasites will be killed in the freezer after a couple of weeks. I wouldn't do the same thing with chicken or even maybe beef. The only downside is extra freezer burn.

Better to not defrost it until you're actually going to use it.

You could try an electric carving knife - a decent one should be able to cut through frozen meat.

Or a manual/hand bone saw that butchers used to use.

As others have said, defrost it enough to cut it with a normal knife. To be perfectly honest, there's no issue with defrosting and re-freezing food as long as you stay within the use by time frame. The main reason that we're told not to thaw and refreeze food is most people are unable to keep track of the times, if that makes sense.
