Sounds like you might be better off with two pans.. A more traditional frying pan/flat bottom wok and an oven safe casserole / sauté type thing rather than trying to have one pan for everything?
My wife really likes the Tefal detachable handle system — it makes the pans easier to put in the oven/dishwasher/cupboard etc. But she doesn’t want non-stick and she likes the idea of having both “frying” and “serving” handles separately.

I think we’re going to get the Cristel frying pan from the OP and the 5L sauté pan. They will share the same lid and handles, the frying pan can be used for day-to-day and the sauté can be used for larger dishes etc.
We need a new regular frying pan anyway, so this seems to be the best solution — although far from the cheapest.
